In hot summers, it is difficult to imagine food that is lighter, healthier, and at the same time, well-nourishing than traditional Spanish cold gazpacho soup. Usually it is made from tomatoes, but we have for you an original gazpacho recipe from the new Choice / Healthy Social Club restaurant from a huge amount of greens and fresh green vegetables. You will receive not just a bowl of soup, but a source of a huge amount of vitamins, minerals, antioxidants, organic acids and other substances useful and necessary for our body.

Ingredients:
- 400 g fresh cucumbers
- 150 g avocado pulp
- 150 g bell pepper
- 50 g green onions
- 20 g cilantro
- 1 radish
- 50 g spinach leaves
- 2 cloves of garlic
- 20 ml white wine vinegar
- 50 ml olive oil
- 50 ml of vegetable oil
- 80 ml of drinking water
- 10 ml lime juice
- 10 g of pink salt
Recipe
- Cut all the vegetables into large pieces, transfer to a blender, add oil, salt and beat until smooth.
- Add lime juice, water and mix.
- When serving, garnish with herbs (mint, basil, tarragon), slices of fresh cucumber and radish. If desired, add a couple drops of hot oil.
