Ingredients achaari gobhi recipe

1. 1 medium cauliflower.
2. 1 1/2 tablespoons mustard oil.
3. 1/2 teaspoon mustard seeds.
4. 1/2 teaspoon cumin seeds.
5. 1/4 teaspoon fenugreek seeds.
6. 1/2 teaspoon fennel seeds.
7. 1/4 teaspoon onion seeds.
8. 1 teaspoon coriander seeds, crushed.
9. 1/4 teaspoon asafoetida.
10. 1 medium onion, chopped.
11. 1 teaspoon ginger paste.
12. 1 teaspoon garlic paste.
13. 3 green chillies, chopped.
14. Salt to taste.
15. 1/2 teaspoon turmeric powder.
16. 3/4 cup skimmed milk yogurt.

 

Method of  achaari gobhi recipe

1. Separate the cauliflower into large florets.

2. Heat the mustard oil to smoking point in a non-stick kadai; add the mustard seeds, cumin seeds, fenugreek seeds, fennel seeds, onion seeds, crushed coriander seeds and asafoetida, and sauté till they begin to change color.

3. Add the onion and sauté till translucent. Add the ginger paste, garlic paste, and green chilies and sauté till the onion turns light brown.

4. Add the cauliflower and salt and sauté over medium heat till brown.

5. Add the turmeric powder and one cup of water and cook, covered, for ten to fifteen minutes, or till cooked.

6. Add the yogurt and continue to cook till the water evaporates and the gravy coats the cauliflower.

7. Serve hot.
